You will need:
2 chicken portions (or 1 per person)
Feta Cheese
Lettuce
Cherry tomatoes
Cucumber
Black olives
Onion shredded
Cabbage shredded
Red pepper
For the Dressing
4 tablespoons of Greek yogurt
Juice of half a lemon
Red wine vinegar - 1 tablespoon
Oregano finely chopped
1/2 teaspoon garlic salt
Seasoning - but go easy on the salt as feta is quite salty
Dice the chicken and cook as preferred, either baked in oven, seared on a griddle or flash fried in a wok. Set aside and allow to cool.
Meanwhile mix together yogurt, lemon juice, vinegar, herbs and seasoning in a dish to make the dressing, mix well to combine. You can add further small quantities of herbs, ie basil, coriander or mint as preferred.
Arrange all salad ingredients on plate, together with the olives. Once cooled, place chicken on top and crumble on the feta cheese. Spoon over dressing.
Serving Suggestion: Serve with warmed wholemeal pitta.
