You will need:
Coconut or sesame oil
1 1/2 Tsp ground allspice
1 1/2 Tsp garam marsala
1/2 Tsp turmeric
4 Cardamom pods
Onion (chopped)
2 Garlic cloves (chopped)
Fresh ginger (thumb size piece, chopped)
1 Tin tomatoes
1 Tin coconut milk
1 Tin three bean salad (or alternative)
Seasoning
Heat the oil in a pan or wok over a medium-high heat. Add onion, garlic and ginger and fry until soft. Add all spices together. Stir in coconut milk, tomatoes and add the beans, now season to taste. Bring up the heat until just boiling. Reduce heat and simmer for ten minutes. Adjust seasoning and serve sprinkled with fresh coriander to garnish. Or as an alternative add more chilli for spice or a dab of yogurt to finish if liked.
