What's the Surprise?
This is a pastry type dough crust made using plain or Greek yogurt instead of butter or fat.
Preparation: 30 minutes
Cooking: 30 minutes
Servings: 4
You will need:
Crust
250g plain flour
250g plain or Greek yogurt
4-5 tblsp water
seasoning
Filling
300g spinach
250g Ricotta cheese
Seasoning
50g Parmesan (optional)
Pre-heat the oven 190 fan
For the crust, work together flour, yogurt and seasoning either by hand or in a processor if preferred. Add water a little at a time until the mixture forms a pastry type dough.
You can cling wrap and refrigerate for 30 mins or use immediately.
Line and grease an 8" flan dish or loose bottomed cake tin.
Roll out the pastry dough and put into the lined dish.
For the filling: Gently combine all ingredients, smooth into crust and bake for 30 minutes.
You may need to experiment with the crust to get it exactly right and there are a number of options you could try:
Add some toasted sesame seeds to the dough mix before rolling out.
Add some sunflower, pumpkin or other seed mix to the top before baking.
